RESERVA ZORZAL DOMINICAN REPUBLIC

The Origin
Located in the rugged Duarte Province, Reserva Zorzal is a 1,019-acre private reserve and Smithsonian-certified Bird Friendly sanctuary. Founded by Dr. Charles Kerchner, it dedicates 70% of its land to wild rainforest to protect the endangered Bicknell’s Thrush. The remaining 30% is a sustainable agroforestry site where organic cacao grows under a diverse canopy of macadamia and banana trees.

Reserva Zorzal models Clear Water Cocoa’s dedication to conservation and post-harvest excellence. Beans from the estate and surrounding community partners are processed with scientific precision at the Zorzal Fermentorium. This high-mountain terroir yields a sophisticated, consistent flavor profile balanced by deep caramel, toasted walnut, and a vibrant tart cherry acidity.

Tasting Notes

When I think chocolate I think of Zorzal. This is as chocolaty as it gets. These beans also have an amazing cherry aroma that complements the chocolate perfectly. 

Sourcing, Fermentation, & Drying

Beans are sourced from more than 100 local farmers. They are fermented in lined boxes, dried on cement patios, and blended together before exporting.
