The Origin
Located near Pollachi in Tamil Nadu, the Anamalai Estate is a masterclass in regenerative polyculture managed by Harish Manoj and Karthi Palaniswamy. This single estate integrates Forastero and Criollo cacao trees beneath a lush canopy of coconut palms and nutmeg trees. The farm thrives in harmony with its environment, utilizing a native cow herd for natural weeding and organic compost while leaving migration corridors open for local wildlife.

Anamalai Estate aligns perfectly with Clear Water Cocoa’s focus on agricultural innovation and craftsmanship. The beans are processed via a meticulous five-tier wooden fermentation cascade and sun-dried on raised beds. Due to a exceptionally high natural cocoa butter content, they yield a luxurious, velvety mouthfeel. The distinct Indian terroir delivers a bright, layered profile opening with tropical mango and sweet guava, followed by a rich finish of warm caramel, heavy cream, and toasted peanuts.
Tasting Notes
We taste classic fudgy chocolate with a brownie-like base, accented by nutty undertones and a smooth, floral finish.
Sourcing, Fermentation, & Drying
The harvested beans are fermented in a five-tear wooden boxes, then sun dried on raised beds.
