Our single-origin chocolate bars are crafted using cocoa beans harvested from one specific region, country, or even a single farm. We don’t blend our beans from various countries to create a uniform flavor. Single-origin chocolate celebrates the unique “terroir” of its specific home. Just like fine wine or specialty coffee, the soil, climate, and local farming traditions shape the natural flavor of the bean. When you eat a single-origin bar, you are tasting the distinct, unblended essence of a single place on Earth.

Grown in the high-mountain rainforests of the Dominican Republic, these organic beans come from a private reserve dedicated to protecting the endangered Bicknell’s Thrush bird. By dedicating 70% of their land to wild conservation, Reserva Zorzal seamlessly blends rainforest preservation with world-class agroforestry. Their meticulous, centralized fermentation results in a remarkably consistent bean that delivers a sophisticated balance

Tasting Notes​

Roasting Profile​

We roast our Reserva Zorzal beans with a gentle medium roast. Dominican Republic beans naturally have deep, rich base notes, the goal of the roast is to fully develop the sugars while protecting the delicate, fruity top notes.

The Origin
Located in the rugged Duarte Province, Reserva Zorzal is a 1,019-acre private reserve and Smithsonian-certified Bird Friendly sanctuary. Founded by Dr. Charles Kerchner, it dedicates 70% of its land to wild rainforest to protect the endangered Bicknell’s Thrush. The remaining 30% is a sustainable agroforestry site where organic cacao grows under a diverse canopy of macadamia and banana trees.
