Our single-origin chocolate bars are crafted using cocoa beans harvested from one specific region, country, or even a single farm. We don’t blend our beans from various countries to create a uniform flavor. Single-origin chocolate celebrates the unique “terroir” of its specific home. Just like fine wine or specialty coffee, the soil, climate, and local farming traditions shape the natural flavor of the bean. Nestled in Ecuador’s lush Guayas region, Camino Verde bridges traditional farming with advanced fermentation science to produce scientifically tailored, ethically sourced Neo-Nacional beans. At Clear Water Cocoa Company, our partnership with microbiologist Vicente Norero brings this innovative, flavor-dense Ecuadorian heritage straight to the Chippewa Valley through our meticulous small-batch roasting process.

Tasting Notes​

When I think chocolate, I think of Camino Verde beans. These beans produce a classic chocolate, brownie-like profile, accented by nutty undertones and a smooth lingering finish. 

Roasting Profile​

We apply a gentle, low-and-slow roasting profile. This precise heat control curbs aggressive volatile acids, perfectly drawing out Camino Verde’s signature notes of deep fudge and toasted almond.
