Founded and led by microbiologist Vicente Norero, the estate operates as a centralized fermentary that bridges the gap between traditional Ecuadorian farming and advanced fermentation science. Norero’s background allows him to treat the post-harvest process like a laboratory, fine-tuning fermentation to unlock precise, consistent notes of rich fudge, toasted almond, and delicate florals.

Sourcing, Fermentation, & Drying

Beans are sourced from more than 100 local farmers. They are fermented in lined boxes, dried on cement patios, and blended together before exporting.
